Bunny Chow

 


A South African Favorite 

Ingredients:

* 1 brown onion
2 garlic cloves
* 30 g olive oil
* 2 tomatoes (medium), cut into small pieces
* 1 tbsp tomato paste
* 1 tbsp curry powder
* 2 tsp white sugar
* 2 tbsp white vinegar
* 2 tsp salt
* ½ tsp ground cinnamon
* ½ tsp ground nutmeg
* 350 g potatoes, cut into cubes
* 1 dried bay leaf
* 500 g vegan meat of choice of lentils
* 40 g sultanas
* 3 bread loaves (unsliced)


Preparation:


* Mince onion and garlic, then sauté.
Add tomatoes, tomato paste, curry powder, sugar, vinegar, salt, cinnamon and nutmeg and blend.
Then add potatoes and bay leaf and cook until potatoes become almost soft.
Add vegan meat substitute and sultanas and cook 5 more minutes
Cut each loaf of bread into thirds, and reserve the ends. Hollow out the soft inner part of loaf portions, leaving approx. 2 cm of bread as a 'container'. 
* Fill each hollowed out loaf portion with curry and serve.
