Bunny Chow
A South African Favorite
Ingredients:
* 1 brown onion
* 2 garlic cloves
* 30 g olive oil
* 2 tomatoes (medium), cut into small pieces
* 1 tbsp tomato paste
* 1 tbsp curry powder
* 2 tsp white sugar

* 1 tbsp tomato paste
* 1 tbsp curry powder
* 2 tsp white sugar
* 2 tbsp white vinegar
* 2 tsp salt
* ½ tsp ground cinnamon
* ½ tsp ground nutmeg
* 350 g potatoes, cut into cubes
* 1 dried bay leaf
* 500 g vegan meat of choice of lentils
* 40 g sultanas
* 3 bread loaves (unsliced)
Preparation:
* Add tomatoes, tomato paste, curry powder, sugar, vinegar, salt, cinnamon and nutmeg and blend.
* Then add potatoes and bay leaf and cook until potatoes become almost soft.
* Add vegan meat substitute and sultanas and cook 5 more minutes
* Cut each loaf of bread into thirds, and reserve the ends. Hollow out the soft inner part of loaf portions, leaving approx. 2 cm of bread as a 'container'.
* Fill each hollowed out loaf portion with curry and serve.
