Seitan Rogan Josh

  

My first Rogan Josh, made from scratch with seitan pieces, on garlic potatoes.. 💚 soooo good guys!


Seitan:


Ingredients:


* 50 g shelled walnuts

* 80 g onions, quartered

* 40 g soy sauce

* 30 g brown sugar

* 1 garlic cloves

* 1 tsp fine sea salt

* 150 g water

* 175 g vital wheat gluten

* 1 pinch ground black pepper


Preparation:


* Grind walnuts until it becomes a powder form.

* Add Walnut powder, 80 g onions, 10 g soy sauce, 1 garlic clove and salt to a food processor. Process till smooth.

* Add 150 g water and mix.

* Add vital wheat gluten and mix until it forms dough.

* Shape the seitan into a log, the steam for 40 min, allow to cool down before cutting into pieces 

* Add seitan pieces, 30g soy sauce, 30g brown sugar and pepper, then fry in a tiny bit of olive oil.


Rogan Josh:


Ingredients:


* ½ tsp asafoetida

* 2 tbsp water

* 300 g plant-based yoghurt

* Prepared Seitan

* 2 fresh tomatoes, quartered

* 300 g red onion, quartered

* 30 g plant-based butter 

* 2 dried bay leaves

* 3 cm cinnamon quill piece

* 6 whole cloves

* 1 tsp cardamom pods (green)

* 2 cardamom pods (black)

* 1 tsp fennel seeds

* 20 g garlic paste 

* 40 g ginger paste 

* 2 tsp ground coriander

* 1 tsp Kashmiri chilli powder 

* 1 tsp ground cumin

* ½ tsp ground turmeric

* 60 g tomato paste

* 2 tsp garam masala

* 1 tsp salt

* ½ tsp ground black pepper

* Coriander leaves for garnish


Preparation:


* Place asafoetida and water into a large bowl and stir to dissolve, then add to yogurt. Set aside.

* Place tomatoes and onion into a blender and mince, set aside.

* Melt butter in a large pot

* Add bay leaves, cinnamon, cloves, green cardamom, black cardamom and fennel seeds and sauté for a minute.

* Add garlic paste and ginger paste and sauté 1 minute.

* Add ground coriander, chilli powder, cumin, turmeric, tomato paste and reserved onion mixture and simmer for 5 minutes.

* Add reserved yogurt mix, Seitan squares, garam masala, salt and pepper and simmer for 10 minutes. 

* Cover and set aside for 5 minutes, then sprinkle with coriander leaves to serve.
