Nutty Oat Biscuits


* 120g cashews
* 110g hazelnuts 
* 50g rolled oats 
* 40g desiccated coconut 
* 120g pure maple syrup 
* 50g virgin coconut oil
* 2tbsp coconut flour 
* ½tsp bicarbonate of soda 


* Preheat oven to 160°C
* Line 2 large baking trays
* Mill cashews and hazelnuts until fine
* Add nuts, oats, coconut, syrup, oil, flour, and bicarbonate of soda in a processor and mix until it starts to form a ball. 
* Refrigerate for 15 minutes
* Roll heaped teaspoons of mixture into balls and place onto prepared baking trays. Flatten each ball slightly, then bake for 12-15 minutes until golden. 
* Transfer onto a wire rack to cool completely before serving.
