Pea and Mint Fritters
Ingredients:
* 3 spring onions, minced
* 4 garlic cloves, minced
* 40g extra virgin olive oil
* 120g chickpea flour
* 1tsp bicarbonate of soda
* 1tsp salt
* 10 sprigs fresh mint, leaves only
* 600g frozen peas
* vegan mayonnaise
* 1 lemon, cut into wedges
Preparation:
* Sauté spring onions, garlic and oil.
* Add garlic/onion mixture, flour, bicarbonate of soda, salt, mint and peas into food processor, then blend until it is a fine consistency.
* Place a large frying pan over medium heat and add a little oil. Shape spoonfuls of batter into fritters, fry them for 2-3 minutes on each side, until brown and cooked.
* Serve with mayonnaise or lemon wedges.
